Spinach and Feta Frittata
Ingredients
- 8 large eggs
- ½ cup almond milk
- 1 Tbsp. olive oil
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 cups fresh spinach roughly chopped
- ½ cup crumbled feta cheese ensure it’s gluten-free
- Salt and pepper to taste
Optional:
- Cherry tomatoes for garnish, fresh herbs, for serving
Instructions
- Preheat your oven to 375°F. In a large bowl, whisk together the eggs and almond milk until fully combined. Season with a pinch of salt and pepper.
- Heat olive oil in a 10-inch oven-proof skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant.
- Pour the egg mixture over the sautéed onion, garlic, and spinach. Crumble the feta cheese evenly over the top. Let it cook without stirring for about 2-3 minutes, allowing the bottom to set slightly.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is set and the top is lightly golden. Once done, let it cool for a few minutes. Garnish with cherry tomatoes and fresh herbs before serving.
