Ingredients
  

  • 8 large eggs
  • ½ cup almond milk
  • 1 Tbsp. olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 cups fresh spinach roughly chopped
  • ½ cup crumbled feta cheese ensure it’s gluten-free
  • Salt and pepper to taste

Optional:

  • Cherry tomatoes for garnish, fresh herbs, for serving

Instructions
 

  • Preheat your oven to 375°F. In a large bowl, whisk together the eggs and almond milk until fully combined. Season with a pinch of salt and pepper.
  • Heat olive oil in a 10-inch oven-proof skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant.
  • Pour the egg mixture over the sautéed onion, garlic, and spinach. Crumble the feta cheese evenly over the top. Let it cook without stirring for about 2-3 minutes, allowing the bottom to set slightly.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is set and the top is lightly golden. Once done, let it cool for a few minutes. Garnish with cherry tomatoes and fresh herbs before serving.
