Preheat your oven to 375°F. In a large bowl, whisk together the eggs and almond milk until fully combined. Season with a pinch of salt and pepper.
Heat olive oil in a 10-inch oven-proof skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant.
Pour the egg mixture over the sautéed onion, garlic, and spinach. Crumble the feta cheese evenly over the top. Let it cook without stirring for about 2-3 minutes, allowing the bottom to set slightly.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is set and the top is lightly golden. Once done, let it cool for a few minutes. Garnish with cherry tomatoes and fresh herbs before serving.
