Chia and Almond Milk Pudding with Mixed Berries
Ingredients
- ½ cup chia seeds
- 2 cups unsweetened almond milk ensure it’s gluten-free
- 2 Tbsp. maple syrup plus more to taste
- 1 tsp. vanilla extract
- Pinch of salt
- 1 cup mixed berries for topping
Optional garnishes:
- mint leaves, a sprinkle of gluten-free granola, or a drizzle of honey
Instructions
- In a mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, and a pinch of salt.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight.
- While the pudding sets, prepare your mixed berries. If using strawberries, slice them to match the size of the other berries.
- Once the chia pudding has set, give it a good stir to break up any clumps. Taste and add more maple syrup if you like it sweeter.
