Ingredients
  

  • ½ cup chia seeds
  • 2 cups unsweetened almond milk ensure it’s gluten-free
  • 2 Tbsp. maple syrup plus more to taste
  • 1 tsp. vanilla extract
  • Pinch of salt
  • 1 cup mixed berries for topping

Optional garnishes:

  • mint leaves, a sprinkle of gluten-free granola, or a drizzle of honey

Instructions
 

  • In a mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, and a pinch of salt.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight.
  • While the pudding sets, prepare your mixed berries. If using strawberries, slice them to match the size of the other berries.
  • Once the chia pudding has set, give it a good stir to break up any clumps. Taste and add more maple syrup if you like it sweeter. Spoon the pudding into bowls or glasses, topping each with a generous helping of mixed berries. Garnish with mint leaves, a sprinkle of gluten-free granola, or a drizzle of honey if desired
