Roasted Radishes
Ingredients
- 2 lb radishes whole washed, trimmed, and halved (quartered if they are large)
- 4 T coconut oil
- ⅛ t sea salt to taste
- ⅛ t black pepper to taste
- 1 t dried rosemary
- 2 T balsamic vinegar
- 1 t apple cider vinegar
Instructions
- Preheat oven to 425°F. Toss the radishes, coconut oil, salt, pepper, and rosemary together, and spread evenly on a baking sheet. Roast for 30–35 minutes or until the radishes are fork-tender.
- Mix the vinegars together, and drizzle over the radishes when done. Serve warm or chilled.
