Ingredients
  

  • 4 lamb chops about 1 inch thick
  • Salt to taste
  • 1 tablespoon lard
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey

Instructions
 

Prepare the Sauce:

  • In a small bowl, combine the red wine vinegar, and honey.
  • Whisk together until well combined.
  • Season with salt to taste.
  • Set aside to allow the flavors to meld.

Season the Lamb Chops:

  • Pat the lamb chops dry with paper towels.
  • Season both sides generously with salt.

Cook the Lamb Chops:

  • Heat the lard in a large skillet over medium-high heat.
  • Add the lamb chops to the skillet and cook for 3-4 minutes per side for medium-rare, or until they reach your desired level of doneness.

Rest and Serve:

  • Transfer the lamb chops to a plate and let them rest for 5 minutes.
  • Serve the lamb chops.
