Creamy Cauliflower Chicken
Ingredients
- 1 T grass-fed butter softened
- ½ cup cream cheese
- 1 cup heavy cream
- 2 t sea salt
- 1 t black pepper
- 4 4-oz boneless, skinless chicken breasts, cubed
- 1 onion sliced
- 14 oz cauliflower florets
- ½ cup shredded cheddar cheese
- 1 T chopped fresh thyme
Instructions
- Grease a 4- to 6-quart slow cooker with the butter.
- In a bowl, mix the cream cheese, heavy cream, sea salt, and black pepper.
- Place the chicken, onion, and cauliflower florets into the prepared slow cooker.
- Pour the cheese mixture over the chicken and vegetables. Cover and cook on LOW for 6 hours.
- When ready to serve, sprinkle with the cheddar cheese and top with the thyme.
