Creamy Cauliflower Chicken

Ingredients
  

  • 1 T grass-fed butter softened
  • ½ cup cream cheese
  • 1 cup heavy cream
  • 2 t sea salt
  • 1 t black pepper
  • 4 4-oz boneless, skinless chicken breasts, cubed
  • 1 onion sliced
  • 14 oz cauliflower florets
  • ½ cup shredded cheddar cheese
  • 1 T chopped fresh thyme

Instructions
 

  • Grease a 4- to 6-quart slow cooker with the butter.
  • In a bowl, mix the cream cheese, heavy cream, sea salt, and black pepper.
  • Place the chicken, onion, and cauliflower florets into the prepared slow cooker.
  • Pour the cheese mixture over the chicken and vegetables. Cover and cook on LOW for 6 hours.
  • When ready to serve, sprinkle with the cheddar cheese and top with the thyme.
