Ingredients
  

  • ½ cup almond flour
  • 2 T coconut flour
  • ½ t baking soda
  • 1 t cinnamon
  • 2 eggs
  • ¼ cup almond milk
  • 1 t vanilla extract
  • ¼ cup coconut oil + 1 T divided
  • ½ cup fresh blueberries

Instructions
 

  • Preheat oven to 350°F, and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the flours, baking soda, and cinnamon.
  • Add the eggs, almond milk, vanilla extract, and ¼ cup of coconut oil to the dry ingredients. Stir in most of the blueberries and reserve a handful for later. Continue mixing until a semi-firm dough forms.
  • Form the dough into 4 fritter patties and press the reserved blueberries on top. Drizzle with the remaining coconut oil to crisp the outer edges and tops.
  • Bake for 10–15 minutes, then remove from the oven and let cool. Serve immediately and enjoy!
