Cinnamon Blueberry Fritters
Ingredients
- ½ cup almond flour
- 2 T coconut flour
- ½ t baking soda
- 1 t cinnamon
- 2 eggs
- ¼ cup almond milk
- 1 t vanilla extract
- ¼ cup coconut oil + 1 T divided
- ½ cup fresh blueberries
Instructions
- Preheat oven to 350°F, and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flours, baking soda, and cinnamon.
- Add the eggs, almond milk, vanilla extract, and ¼ cup of coconut oil to the dry ingredients. Stir in most of the blueberries and reserve a handful for later. Continue mixing until a semi-firm dough forms.
- Form the dough into 4 fritter patties and press the reserved blueberries on top. Drizzle with the remaining coconut oil to crisp the outer edges and tops.
- Bake for 10–15 minutes, then remove from the oven and let cool. Serve immediately and enjoy!
