Ingredients
  

  • 1 lb 450g chicken breast, thinly sliced or pounded into thin pieces
  • 12 slices of ham preferably thin to wrap easily
  • 12 small slices of Swiss cheese or any preferred cheese that melts well
  • 12 slices of thin bacon to wrap around the bites
  • Salt and pepper to taste

Instructions
 

Preheat Oven and Prepare Baking Sheet:

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare Chicken: Season the chicken breast slices with salt and pepper. If the chicken breasts are thick, slice them horizontally into thinner slices or pound them gently between two pieces of plastic wrap to an even thickness of about ¼ inch.
  • Assemble the Bites: On each chicken slice, place a slice of ham and a slice of cheese. Roll the chicken tightly around the ham and cheese.
  • Wrap a slice of bacon around each chicken roll, securing with a toothpick if necessary.
  • Bake: Arrange the bacon-wrapped chicken bites on the prepared baking sheet, seam side down to help keep them closed while cooking.
  • Bake in the preheated oven for 25-30 minutes, or until the bacon is crispy and the chicken is cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  • Serve: Remove the chicken cordon bleu bites from the oven and let them rest for a few minutes before serving. Be cautious of the toothpicks if you used them.
