Spicy Lemon-Garlic Shrimp Skewers
Ingredients
- 1 Spicy Lemon-Garlic Shrimp Skewers
- Olive oil for greasing
- 1 lb medium shrimp peeled and deveined, tail on
- 2 lemons halved and sliced
- 1 T lemon zest
- 1 T chili flakes
- 3 garlic cloves minced
- ¼ cup fresh lemon juice
- 2 T fresh parsley chopped
- Salt to taste
Instructions
- Soak the wooden skewers in water for 10 minutes.
- Heat the grill on medium heat, and grease with olive oil.
- Thread the shrimp and halved lemon slices onto the wooden skewers.
- Place the skewers in a single layer onto the grill.
- Sprinkle the lemon zest, red chili flakes, and minced garlic on top.
- Cook until the shrimp turns pink and the flesh is firm (about 4 minutes per side).
- Place the shrimp skewers on a plate. Drizzle with lemon juice, garnish with fresh parsley, and serve.
