Tomato and Basil Bruschetta
Ingredients
- 4 large ripe tomatoes finely diced
- 1/4 cup fresh basil leaves chopped
- 2 cloves garlic minced
- 1 Tbsp. extra virgin olive oil
- 1 tsp. balsamic vinegar
- Salt and pepper to taste
- 1 GF baguette sliced and toasted
Optional:
- 1 garlic clove, halved, for rubbing on the toasted baguette slices
Instructions
- In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, and balsamic vinegar. Gently toss to ensure the ingredients are well mixed. Season with salt and pepper to taste. Let the mixture sit for about 10 minutes to allow the flavors to meld together.
- While the tomato mixture is resting, toast the slices of gluten-free baguette. For added flavor, lightly rub one side of each toasted slice with the halved garlic clove.
- Spoon a generous amount of the tomato mixture onto each toasted baguette slice. Make sure to include some of the juices, which are full of flavor. Serve immediately, while the baguette slices are still warm and crispy, to enjoy the contrast with the cool, fresh tomato topping.
Tip:
- For the best flavor, use tomatoes that are ripe and full of flavor. Different varieties of tomatoes can be mixed to enhance the taste and visual appeal of the bruschetta.
