Salmon Salad
Ingredients
- 2 6 oz cans salmon
- 3 T Paleo mayonnaise
- 2 t Dijon mustard
- ⅛ t sea salt to taste
- ⅛ t black pepper to taste
- 4 cups mixed greens
- 1 medium avocado peeled and sliced
- 2 medium green onions diced, optional
Instructions
- In a medium bowl, combine the salmon, mayo, mustard, and spices. Stir together until well mixed.
- Divide the greens between 2 plates. Scoop the salmon salad onto the greens, and top with avocado slices and green onions if desired.
