Ingredients
  

  • 16 oz fresh squid (cleaned and cut into rings).
  • 14 oz canned tomatoes (whole).
  • 3 garlic cloves (crushed).
  • 1 cup water.
  • 1 onion (cut into rings).
  • 2 tomatoes (fresh and cubed).
  • 2 tbsp olive oil.
  • ½ tsp rosemary.

Instructions
 

  • In a large saucepan, heat olive oil and cook onions and garlic until soft.
  • Add canned tomatoes and water, simmer for 5 minutes.
  • Add squid rings, fresh tomatoes and rosemary; let simmer for 6 - 7 minutes or until squid is cooked through.
