- 16 oz fresh squid (cleaned and cut into rings).
- 14 oz canned tomatoes (whole).
- 3 garlic cloves (crushed).
- 1 cup water.
- 1 onion (cut into rings).
- 2 tomatoes (fresh and cubed).
- 2 tbsp olive oil.
- ½ tsp rosemary.
In a large saucepan, heat olive oil and cook onions and garlic until soft.
Add canned tomatoes and water, simmer for 5 minutes.
Add squid rings, fresh tomatoes and rosemary; let simmer for 6 - 7 minutes or until squid is cooked through.
