Keto Hearty Yellow Squash Soup

Ingredients
  

  • 1 Tbsp lard
  • 3 lbs summer yellow squash cut into 1-inch chunks
  • 1 cup bone broth
  • 1 cup water
  • 2 cloves garlic minced
  • 1/2 cup coconut milk
  • 1 bay leaf
  • Salt and fresh- ground black pepper to taste

Instructions
 

  • Preheat oven to 450° Grease a rimmed baking dish with lard.
  • Place cleaned and chopped squash on a rimmed baking sheet in a single layer. Bake 15 to 20 minutes, stirring once until cooked through. Cut the squash into cubes.
  • Heat the lard in a large pot and add the roasted squash and all remaining ingredients. Reduce heat to medium-low, cover and simmer for 10 - 12 minutes.
  • When ready, remove bay leaf and transfer squash mixture to a blender.
  • Blend until smooth and creamy. Taste, adjust salt and pepper and serve.
