Keto Hearty Yellow Squash Soup
Ingredients
- 1 Tbsp lard
- 3 lbs summer yellow squash cut into 1-inch chunks
- 1 cup bone broth
- 1 cup water
- 2 cloves garlic minced
- 1/2 cup coconut milk
- 1 bay leaf
- Salt and fresh- ground black pepper to taste
Instructions
- Preheat oven to 450° Grease a rimmed baking dish with lard.
- Place cleaned and chopped squash on a rimmed baking sheet in a single layer. Bake 15 to 20 minutes, stirring once until cooked through. Cut the squash into cubes.
- Heat the lard in a large pot and add the roasted squash and all remaining ingredients. Reduce heat to medium-low, cover and simmer for 10 - 12 minutes.
- When ready, remove bay leaf and transfer squash mixture to a blender.
- Blend until smooth and creamy. Taste, adjust salt and pepper and serve.
