Soba Noodles with Edamame and Sesame Dressing
Ingredients
- 8 oz soba noodles
- 1 cup edamame shelled
- 1 carrot julienned
- 1 red bell pepper thinly sliced
- 1 cucumber julienned
- 2 green onions sliced
For the Dressing:
- 3 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 clove garlic minced
- 1 teaspoon fresh ginger grated
- 2 tablespoons sesame seeds
Instructions
- Cook soba noodles according to package directions. Rinse with cold water.
- Cook edamame according to package directions.
- Whisk together all dressing ingredients.
- Combine noodles, edamame, and vegetables in a large bowl.
- Toss with dressing and let marinate for 10 minutes.
- Serve chilled or at room temperature.
