Soba Noodles with Edamame and Sesame Dressing

Ingredients
  

  • 8 oz soba noodles
  • 1 cup edamame shelled
  • 1 carrot julienned
  • 1 red bell pepper thinly sliced
  • 1 cucumber julienned
  • 2 green onions sliced

For the Dressing:

  • 3 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 clove garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons sesame seeds

Instructions
 

  • Cook soba noodles according to package directions. Rinse with cold water.
  • Cook edamame according to package directions.
  • Whisk together all dressing ingredients.
  • Combine noodles, edamame, and vegetables in a large bowl.
  • Toss with dressing and let marinate for 10 minutes.
  • Serve chilled or at room temperature.
