For the Dressing:

rice vinegar

low-sodium soy sauce

garlic

fresh ginger

Instructions
Cook soba noodles according to package directions. Rinse with cold water.
Cook edamame according to package directions.
Whisk together all dressing ingredients.
Combine noodles, edamame, and vegetables in a large bowl.
Toss with dressing and let marinate for 10 minutes.
Serve chilled or at room temperature.
