Mini Meatloaf
Ingredients
- 2 lbs 900g ground beef (85% lean/15% fat for moisture)
- 2 large eggs as a binder
- Salt to taste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it with a bit of beef tallow or lining with parchment paper cups for easy removal.
- Mix Ingredients: In a large bowl, combine the ground beef, eggs, and salt. Mix thoroughly to ensure the egg and salt are evenly distributed throughout the beef.
- Form Mini Meatloaves: Divide the meat mixture into the prepared muffin tin compartments, filling each to just below the top. You can also shape them by hand and place them on a baking sheet if you prefer a more traditional loaf shape in mini size.
- Bake: Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the meatloaves are cooked through. The internal temperature should reach 160°F (71°C) when they’re done.
- Rest and Serve: Remove the mini meatloaves from the oven and let them rest for a few minutes before serving. This allows the juices to redistribute, making the meatloaves moist and flavorful.
