Lemon Garlic Shrimp with Quinoa
Ingredients
- 1 1/2 lbs large shrimp peeled and deveined
- 1 cup quinoa rinsed
- 2 cups low-sodium chicken or vegetable broth
- 4 cloves garlic minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh oregano
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups baby spinach
- 1/4 cup pine nuts toasted
Instructions
- Cook quinoa in broth according to package directions. Set aside.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
- Season shrimp with salt and pepper.
- Cook shrimp for 2-3 minutes per side until pink and cooked through.
- Add garlic and cook for 30 seconds until fragrant.
- Add lemon juice, remaining olive oil, herbs, and red pepper flakes.
- Stir in cooked quinoa and spinach until spinach wilts.
- Top with toasted pine nuts before serving.
