Lemon Garlic Shrimp with Quinoa

Ingredients
  

  • 1 1/2 lbs large shrimp peeled and deveined
  • 1 cup quinoa rinsed
  • 2 cups low-sodium chicken or vegetable broth
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups baby spinach
  • 1/4 cup pine nuts toasted

Instructions
 

  • Cook quinoa in broth according to package directions. Set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  • Season shrimp with salt and pepper.
  • Cook shrimp for 2-3 minutes per side until pink and cooked through.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add lemon juice, remaining olive oil, herbs, and red pepper flakes.
  • Stir in cooked quinoa and spinach until spinach wilts.
  • Top with toasted pine nuts before serving.
