Instructions
Cook quinoa in broth according to package directions. Set aside.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Season shrimp with salt and pepper.
Cook shrimp for 2-3 minutes per side until pink and cooked through.
Add garlic and cook for 30 seconds until fragrant.
Add lemon juice, remaining olive oil, herbs, and red pepper flakes.
Stir in cooked quinoa and spinach until spinach wilts.
Top with toasted pine nuts before serving.
