Mediterranean Grilled Fish with Vegetables
Ingredients
- 4 white fish fillets cod, halibut, or sea bass, 6 oz each
- 2 zucchini sliced lengthwise
- 1 eggplant sliced into rounds
- 2 red bell peppers cut into strips
- 1 red onion sliced
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic minced
- 2 tablespoons fresh oregano
- 1 tablespoon fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup kalamata olives pitted
- 2 tablespoons capers
- Fresh basil for garnish
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Marinate fish in half the mixture for 10 minutes.
- Toss vegetables with remaining marinade.
- Grill vegetables for 8-10 minutes, turning once, until tender and lightly charred.
- Grill fish for 4-5 minutes per side until it flakes easily.
- Arrange fish and vegetables on serving platter.
- Top with olives, capers, and fresh basil.
