Mediterranean Grilled Fish with Vegetables

Ingredients
  

  • 4 white fish fillets cod, halibut, or sea bass, 6 oz each
  • 2 zucchini sliced lengthwise
  • 1 eggplant sliced into rounds
  • 2 red bell peppers cut into strips
  • 1 red onion sliced
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic minced
  • 2 tablespoons fresh oregano
  • 1 tablespoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup kalamata olives pitted
  • 2 tablespoons capers
  • Fresh basil for garnish

Instructions
 

  • Preheat grill to medium-high heat.
  • In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  • Marinate fish in half the mixture for 10 minutes.
  • Toss vegetables with remaining marinade.
  • Grill vegetables for 8-10 minutes, turning once, until tender and lightly charred.
  • Grill fish for 4-5 minutes per side until it flakes easily.
  • Arrange fish and vegetables on serving platter.
  • Top with olives, capers, and fresh basil.
