Ingredients
  

  • 1 large bunch of kale stems removed and leaves torn into bite-sized pieces
  • 2 Tbsp olive oil
  • Salt to taste

For the Tahini Dressing:

  • 1/4 cup tahini sesame seed paste
  • 2 Tbsp. lemon juice
  • 1 clove garlic minced
  • 2-4 Tbsp. water as needed to thin
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper. In a large bowl, toss the kale pieces with olive oil and a sprinkle of salt until evenly coated. Spread the kale in a single layer on the prepared baking sheet, ensuring the pieces do not overlap for even cooking.
  • Bake for 10-15 minutes, or until the edges are slightly browned and the kale is crispy. Keep a close eye on them, as they can quickly go from perfect to burnt.
  • While the kale chips are baking, prepare the tahini dressing. In a small bowl, whisk together the tahini, lemon juice, minced garlic, and water (add one tablespoon at a time until you reach your desired consistency). Season with salt and pepper to taste. Once the kale chips are done, let them cool slightly on the baking sheet. They will continue to crisp up as they cool. Serve the kale chips with the tahini dressing on the side for dipping or drizzle the dressing over the chips before serving.

Tip:

  • Make sure the kale is thoroughly dry after washing to prevent steaming instead of crisping in the oven.
