Cucumber Dill Salad

Servings 1 Serving

Ingredients
  

  • ½ Cucumber sliced
  • ¼ Small Red Onion thinly sliced
  • 1 Tablespoon Dill fresh + finely minced
  • ¼ Garlic Clove minced
  • 2-3 Tablespoons Greek Yogurt
  • ¼ Tablespoon Lemon Juice
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions
 

  • Place cucumber slices in a colander, sprinkling with salt. Let stand for 15 minutes, stirring occasionally. After 15 minutes, drain cucumbers then pat dry. In a separate cup, mix Greek yogurt, minced dill, garlic and lemon juice. Combine the sliced onions, cucumber and yogurt mixture in a medium bowl. Refrigerate for at least 15 minutes before serving.
