Cucumber Dill Salad
Ingredients
- ½ Cucumber sliced
- ¼ Small Red Onion thinly sliced
- 1 Tablespoon Dill fresh + finely minced
- ¼ Garlic Clove minced
- 2-3 Tablespoons Greek Yogurt
- ¼ Tablespoon Lemon Juice
- 1 pinch Salt
- 1 pinch Pepper
Instructions
- Place cucumber slices in a colander, sprinkling with salt. Let stand for 15 minutes, stirring occasionally. After 15 minutes, drain cucumbers then pat dry. In a separate cup, mix Greek yogurt, minced dill, garlic and lemon juice. Combine the sliced onions, cucumber and yogurt mixture in a medium bowl. Refrigerate for at least 15 minutes before serving.
