Baked Salmon with Herb Crust
Ingredients
- 4 salmon fillets 6 oz each, skin removed
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup fresh parsley chopped
- 2 tablespoons fresh dill chopped
- 2 tablespoons fresh chives chopped
- 2 cloves garlic minced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges for serving
Instructions
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- In a bowl, combine breadcrumbs, herbs, garlic, 2 tablespoons olive oil, salt, and pepper.
- Pat salmon fillets dry and place on prepared baking sheet.
- Brush salmon with remaining olive oil, lemon juice, and Dijon mustard.
- Press herb mixture evenly onto top of each fillet.
- Bake for 12-15 minutes until fish flakes easily with a fork.
- Serve immediately with lemon wedges.
