Baked Salmon with Herb Crust

Ingredients
  

  • 4 salmon fillets 6 oz each, skin removed
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh chives chopped
  • 2 cloves garlic minced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges for serving

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, combine breadcrumbs, herbs, garlic, 2 tablespoons olive oil, salt, and pepper.
  • Pat salmon fillets dry and place on prepared baking sheet.
  • Brush salmon with remaining olive oil, lemon juice, and Dijon mustard.
  • Press herb mixture evenly onto top of each fillet.
  • Bake for 12-15 minutes until fish flakes easily with a fork.
  • Serve immediately with lemon wedges.
