Brown Rice Paella with Vegetables
Ingredients
- 1 1/2 cups brown rice
- 3 cups low-sodium vegetable broth
- 1/4 teaspoon saffron threads
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 cup green beans trimmed
- 1 cup artichoke hearts quartered
- 1/2 cup green peas
- 1 onion diced
- 4 cloves garlic minced
- 1/4 cup olive oil
- 2 tomatoes grated
- 1/4 cup fresh parsley chopped
- Lemon wedges for serving
Instructions
- Steep saffron in warm broth.
- Heat olive oil in a large paella pan or skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and grated tomato, cook for 3 minutes.
- Add rice and stir for 2 minutes.
- Add saffron broth and bring to a boil.
- Add bell peppers and green beans.
- Reduce heat and simmer for 25 minutes without stirring.
- Add artichokes and peas in final 5 minutes.
- Let rest 5 minutes, garnish with parsley, and serve with lemon.
