Brown Rice Paella with Vegetables

Ingredients
  

  • 1 1/2 cups brown rice
  • 3 cups low-sodium vegetable broth
  • 1/4 teaspoon saffron threads
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup green beans trimmed
  • 1 cup artichoke hearts quartered
  • 1/2 cup green peas
  • 1 onion diced
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 2 tomatoes grated
  • 1/4 cup fresh parsley chopped
  • Lemon wedges for serving

Instructions
 

  • Steep saffron in warm broth.
  • Heat olive oil in a large paella pan or skillet over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add garlic and grated tomato, cook for 3 minutes.
  • Add rice and stir for 2 minutes.
  • Add saffron broth and bring to a boil.
  • Add bell peppers and green beans.
  • Reduce heat and simmer for 25 minutes without stirring.
  • Add artichokes and peas in final 5 minutes.
  • Let rest 5 minutes, garnish with parsley, and serve with lemon.
