Lemon wedges for serving
Instructions
Steep saffron in warm broth.
Heat olive oil in a large paella pan or skillet over medium heat.
Add onion and cook until softened, about 5 minutes.
Add garlic and grated tomato, cook for 3 minutes.
Add rice and stir for 2 minutes.
Add saffron broth and bring to a boil.
Add bell peppers and green beans.
Reduce heat and simmer for 25 minutes without stirring.
Add artichokes and peas in final 5 minutes.
Let rest 5 minutes, garnish with parsley, and serve with lemon.
