Italian Wedding Soup (Heart-Healthy Version)

Ingredients
  

  • 1 lb ground turkey 93% lean
  • 1/2 cup whole wheat breadcrumbs
  • 1 egg beaten
  • 1/4 cup Parmesan cheese grated
  • 8 cups low-sodium chicken broth
  • 1/2 cup whole wheat orzo pasta
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 onion diced
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • Combine turkey, breadcrumbs, egg, and Parmesan. Form into small meatballs.
  • Heat olive oil in a large pot over medium heat.
  • Brown meatballs on all sides, about 6 minutes total.
  • Add onion, carrots, and celery. Cook for 5 minutes.
  • Add garlic and cook for 1 minute.
  • Add broth and bring to a boil.
  • Add orzo and cook for 8 minutes.
  • Stir in spinach until wilted.
  • Season with salt and pepper before serving.
