Italian Wedding Soup (Heart-Healthy Version)
Ingredients
- 1 lb ground turkey 93% lean
- 1/2 cup whole wheat breadcrumbs
- 1 egg beaten
- 1/4 cup Parmesan cheese grated
- 8 cups low-sodium chicken broth
- 1/2 cup whole wheat orzo pasta
- 2 carrots diced
- 2 celery stalks diced
- 1 onion diced
- 4 cups fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic minced
- Salt and pepper to taste
Instructions
- Combine turkey, breadcrumbs, egg, and Parmesan. Form into small meatballs.
- Heat olive oil in a large pot over medium heat.
- Brown meatballs on all sides, about 6 minutes total.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Add garlic and cook for 1 minute.
- Add broth and bring to a boil.
- Add orzo and cook for 8 minutes.
- Stir in spinach until wilted.
- Season with salt and pepper before serving.
