Salt and pepper to taste
Instructions
Combine turkey, breadcrumbs, egg, and Parmesan. Form into small meatballs.
Heat olive oil in a large pot over medium heat.
Brown meatballs on all sides, about 6 minutes total.
Add onion, carrots, and celery. Cook for 5 minutes.
Add garlic and cook for 1 minute.
Add broth and bring to a boil.
Add orzo and cook for 8 minutes.
Stir in spinach until wilted.
Season with salt and pepper before serving.
