Turkey and Quinoa Meatballs
Ingredients
- 1 lb ground turkey
- 1 cup cooked quinoa cooled
- 1 egg beaten
- 1/2 cup onion finely chopped
- 2 cloves garlic minced
- 1/4 cup parsley chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 2 Tbsp olive oil
- 1 cup tomato sauce
Instructions
- In a large bowl, combine the ground turkey, cooked quinoa, beaten egg, onion, garlic, parsley, salt, pepper, and smoked paprika. Mix until all ingredients are well incorporated.
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- Form the mixture into meatballs, about the size of a golf ball, and place them on the prepared baking sheet. Drizzle the meatballs with olive oil, then bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden on the outside.
- While the meatballs are baking, warm the tomato sauce in a saucepan over medium heat. Serve the meatballs hot with the tomato sauce spooned over the top.
Tip:
- These meatballs are versatile and can be served not only with tomato sauce but also in a sandwich, on top of a salad, or as part of a pasta dish with gluten-free pasta.
