Ingredients
  

  • 1 lb ground turkey
  • 1 cup cooked quinoa cooled
  • 1 egg beaten
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 Tbsp olive oil
  • 1 cup tomato sauce

Instructions
 

  • In a large bowl, combine the ground turkey, cooked quinoa, beaten egg, onion, garlic, parsley, salt, pepper, and smoked paprika. Mix until all ingredients are well incorporated.
  • Preheat your oven to 375°F. Line a baking sheet with parchment paper.
  • Form the mixture into meatballs, about the size of a golf ball, and place them on the prepared baking sheet. Drizzle the meatballs with olive oil, then bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden on the outside.
  • While the meatballs are baking, warm the tomato sauce in a saucepan over medium heat. Serve the meatballs hot with the tomato sauce spooned over the top.

Tip:

  • These meatballs are versatile and can be served not only with tomato sauce but also in a sandwich, on top of a salad, or as part of a pasta dish with gluten-free pasta.
