Baked Chicken Thighs with Sweet Potatoes
Ingredients
- 8 boneless skinless chicken thighs
- 3 large sweet potatoes cubed
- 1 red onion sliced
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary chopped
- 1 tablespoon fresh thyme
- 3 cloves garlic minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups Brussels sprouts halved
Instructions
- Preheat oven to 425°F (220°C).
- Toss sweet potatoes and Brussels sprouts with 1 tablespoon olive oil.
- Arrange on a large baking sheet.
- Season chicken with herbs, garlic, paprika, salt, and pepper.
- Drizzle with remaining olive oil.
- Place chicken on baking sheet with vegetables.
- Bake for 35-40 minutes until chicken reaches 165°F.
