Baked Chicken Thighs with Sweet Potatoes

Ingredients
  

  • 8 boneless skinless chicken thighs
  • 3 large sweet potatoes cubed
  • 1 red onion sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Brussels sprouts halved

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Toss sweet potatoes and Brussels sprouts with 1 tablespoon olive oil.
  • Arrange on a large baking sheet.
  • Season chicken with herbs, garlic, paprika, salt, and pepper.
  • Drizzle with remaining olive oil.
  • Place chicken on baking sheet with vegetables.
  • Bake for 35-40 minutes until chicken reaches 165°F.
