Instructions
Preheat oven to 425°F (220°C).
Toss sweet potatoes and Brussels sprouts with 1 tablespoon olive oil.
Arrange on a large baking sheet.
Season chicken with herbs, garlic, paprika, salt, and pepper.
Drizzle with remaining olive oil.
Place chicken on baking sheet with vegetables.
Bake for 35-40 minutes until chicken reaches 165°F.
