Aspen Kale Salad
Ingredients
- ¼ head of Kale diced in food processor
- ¼ Cup Chickpeas
- ¼ Cup Parmesan Cheese
- 1 Small Handful Currants
- ½ Tbsp Olive Oil
- 2 Tablespoons Lemon fresh + juice
- Salt & Pepper
Instructions
- Use a food processor to mince the kale after washing, patting dry and removing stems. Add in chickpeas, parmesan cheese, currants, olive oil, lemon juice and salt & pepper to taste.
