Aspen Kale Salad

Ingredients
  

  • ¼ head of Kale diced in food processor
  • ¼ Cup Chickpeas
  • ¼ Cup Parmesan Cheese
  • 1 Small Handful Currants
  • ½ Tbsp Olive Oil
  • 2 Tablespoons Lemon fresh + juice
  • Salt & Pepper

Instructions
 

  • Use a food processor to mince the kale after washing, patting dry and removing stems. Add in chickpeas, parmesan cheese, currants, olive oil, lemon juice and salt & pepper to taste.
