Grilled Potato,Asparagus and Spinach Salad
Ingredients
- 1 Cup Spinach shredded
- 1 Potato grilled + sliced
- 2 Stalks Asparagus blanched + sliced
- 1 Tablespoon Butter
- ½ Tablespoon Capers
Instructions
- Preheat oven or grill to 400*. Slice potato in thin slices. Cut butter and place over potato slices and cook for 15-20 minutes, checking periodically. If grilling, place on low in an aluminum foil pouch then pan fry once the desired softness. Blanch or cook asparagus (approximately 3-4 minutes). Layer spinach, followed by asparagus, potato slices and add in capers. Toss and enjoy.
