Turkey Chili with Beans
Ingredients
- 1 lb ground turkey 93% lean
- 2 cans 15 oz each kidney beans, drained and rinsed
- 1 can 15 oz black beans, drained and rinsed
- 1 can 28 oz crushed tomatoes
- 1 onion diced
- 1 bell pepper diced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
- Toppings: avocado cilantro, Greek yogurt
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown turkey, breaking it up as it cooks, about 5 minutes.
- Add onion and bell pepper, cook for 5 minutes.
- Add garlic and spices, cook for 1 minute.
- Add tomatoes, beans, and broth. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Serve with desired toppings.
