Ingredients
  

  • 1 Tbsp. olive oil
  • 1/2 lb. chorizo ensure gluten-free, casing removed and crumbled
  • 1 small onion finely chopped
  • 1 jalapeño pepper seeded and finely chopped
  • 1 tomato seeded and diced
  • 2 cups shredded mozzarella cheese
  • 1/4 cup cilantro chopped (for garnish)
  • Gluten-free tortilla chips for serving

Instructions
 

  • Preheat your oven to 375°F if you plan to bake the queso fundido for a bubbly top, or you can also prepare it on the stovetop for a quicker version.
  • Heat the olive oil in a medium skillet over medium heat. Add the crumbled chorizo and cook until it starts to brown, about 5 minutes. Use a slotted spoon to remove the chorizo, leaving the fat in the pan. In the same skillet with the chorizo fat, add the chopped onion and jalapeño pepper. Sauté until the onion is translucent and the jalapeño is soft, about 5 minutes.
  • If baking, transfer the onion and jalapeño mixture to a baking dish. Add the diced tomato and cooked chorizo, mixing slightly. Top evenly with the shredded cheese.
  • Bake in the preheated oven until the cheese is melted and bubbly, about 10 minutes. Alternatively, you can cover the skillet (if oven-proof) with a lid and let the cheese melt over low heat on the stovetop. Garnish with chopped cilantro before serving. Serve warm with gluten-free tortilla chips for dipping.

Tip:

  • For a lighter version, you can substitute the chorizo with ground turkey or chicken seasoned with a blend of paprika, garlic powder, cumin, and a touch of cayenne for heat. Adding a splash of beer or tequila to the chorizo and vegetable mixture can deepen the flavors. Just allow the alcohol to cook off before proceeding with the recipe.
