Mexican Quinoa Salad

Ingredients
  

  • ¼ Cup Quinoa Cooked
  • 4 Ounces Corn drained
  • 4 Ounces Black Beans drained
  • ½ Cup Cherry Tomatoes halved
  • 1 Tablespoon Red Onion diced
  • 2 Tablespoons Cilantro finely chopped
  • 1 Tablespoon Jalapeños diced + optional
  • ½ Large Limes’ Juice
  • 1 Tablespoons Olive Oil
  • ½ Teaspoons Ground Cumin
  • 2-3 Dashes Red Pepper Flakes

Instructions
 

  • Cook quinoa according to the instructions on packaging. Add on top; corn, black beans, cherry tomatoes, red onions, jalapeños and cilantro. Mix together well. In a small bow whisk lime juice, cumin, olive oil, salt, pepper, and red pepper f lakes. Drizzle over an appropriate amount of dressing for individual servings. Maintain separation from dressing and quinoa until ready to serve.
