Mexican Quinoa Salad
Ingredients
- ¼ Cup Quinoa Cooked
- 4 Ounces Corn drained
- 4 Ounces Black Beans drained
- ½ Cup Cherry Tomatoes halved
- 1 Tablespoon Red Onion diced
- 2 Tablespoons Cilantro finely chopped
- 1 Tablespoon Jalapeños diced + optional
- ½ Large Limes’ Juice
- 1 Tablespoons Olive Oil
- ½ Teaspoons Ground Cumin
- 2-3 Dashes Red Pepper Flakes
Instructions
- Cook quinoa according to the instructions on packaging. Add on top; corn, black beans, cherry tomatoes, red onions, jalapeños and cilantro. Mix together well. In a small bow whisk lime juice, cumin, olive oil, salt, pepper, and red pepper f lakes. Drizzle over an appropriate amount of dressing for individual servings. Maintain separation from dressing and quinoa until ready to serve.
