Grilled Sardines with Mediterranean Salad

Ingredients
  

  • 2 lbs fresh sardines cleaned and butterflied
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon oregano
  • Salt and pepper to taste

For the Salad:

  • 4 cups mixed greens
  • 1 cucumber diced
  • 2 tomatoes diced
  • 1/2 red onion thinly sliced
  • 1/4 cup kalamata olives
  • 2 oz feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar

Instructions
 

  • Marinate sardines in olive oil, lemon juice, garlic, oregano, salt, and pepper for 15 minutes.
  • Preheat grill to medium-high heat.
  • For salad, combine greens, cucumber, tomatoes, onion, and olives.
  • Whisk together olive oil and vinegar for dressing.
  • Grill sardines for 3-4 minutes per side until cooked through.
  • Toss salad with dressing and top with feta.
  • Serve sardines with Mediterranean salad.
