Grilled Sardines with Mediterranean Salad
Ingredients
- 2 lbs fresh sardines cleaned and butterflied
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic minced
- 1 teaspoon oregano
- Salt and pepper to taste
For the Salad:
- 4 cups mixed greens
- 1 cucumber diced
- 2 tomatoes diced
- 1/2 red onion thinly sliced
- 1/4 cup kalamata olives
- 2 oz feta cheese crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
Instructions
- Marinate sardines in olive oil, lemon juice, garlic, oregano, salt, and pepper for 15 minutes.
- Preheat grill to medium-high heat.
- For salad, combine greens, cucumber, tomatoes, onion, and olives.
- Whisk together olive oil and vinegar for dressing.
- Grill sardines for 3-4 minutes per side until cooked through.
- Toss salad with dressing and top with feta.
- Serve sardines with Mediterranean salad.
