Caprese Salad

Ingredients
  

  • 1/3 Pound Chicken baked/roasted + diced
  • 1 Cup Romaine Lettuce
  • ½ Medium Tomato diced
  • ¼ Cup Mozzarella fresh + diced
  • ¼ Cup Cucumber diced
  • 1 Tablespoons Basil fresh + minced
  • ¾ Tablespoons Balsamic Vinegar
  • ½ Tablespoon Avocado Oil

Instructions
 

  • In a large skillet add avocado oil and diced chicken, and cook over medium heat, add balsamic vinegar, cooking for 1-2 minutes more. Remove chicken and allow it to rest. In a separate bowl: add the lettuce, diced tomatoes, mozzarella, cucumber and, finally the chicken. Add freshly minced basil atop. Drizzle balsamic vinegar and avocado oil on top of entire dish.
