Caprese Salad
Ingredients
- 1/3 Pound Chicken baked/roasted + diced
- 1 Cup Romaine Lettuce
- ½ Medium Tomato diced
- ¼ Cup Mozzarella fresh + diced
- ¼ Cup Cucumber diced
- 1 Tablespoons Basil fresh + minced
- ¾ Tablespoons Balsamic Vinegar
- ½ Tablespoon Avocado Oil
Instructions
- In a large skillet add avocado oil and diced chicken, and cook over medium heat, add balsamic vinegar, cooking for 1-2 minutes more. Remove chicken and allow it to rest. In a separate bowl: add the lettuce, diced tomatoes, mozzarella, cucumber and, finally the chicken. Add freshly minced basil atop. Drizzle balsamic vinegar and avocado oil on top of entire dish.
