Caprese Salad




  • 1/3 Pound Chicken (baked/roasted + diced)
  • 1 Cup Romaine Lettuce
  • 1⁄2 Medium Tomato (diced)
  • 1⁄4 Cup Mozzarella (fresh + diced)
  • 1⁄4 Cup Cucumber (diced)
  • 1 Tablespoons Basil (fresh + minced)
  • 3⁄4 Tablespoons Balsamic Vinegar
  • 1⁄2 Tablespoon Avocado Oil

Preparation and Cooking

In a large skillet add avocado oil and diced chicken, and cook over medium heat, add balsamic vinegar, cooking for 1-2 minutes more. Remove chicken and allow it to rest. In a separate bowl: add the lettuce, diced tomatoes, mozzarella, cucumber and, finally the chicken. Add freshly minced basil atop. Drizzle balsamic vinegar and avocado oil on top of entire dish.
