Recipe details

Makes: About 5 cups | Prep: 15 minutes | Bake: 20 minutes

Ingredients

  • 3 cups cooked shredded chicken
  • 1 cup plain Greek yogurt
  • 4 ounces softened cream cheese
  • 1/2 cup buffalo-style hot sauce, plus more to taste
  • 1/2 cup shredded cheddar
  • 1/2 cup shredded mozzarella
  • 2 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • Black pepper to taste
  • Celery sticks, carrots and crackers for serving

Oven directions

  1. Heat oven to 375°F. Lightly grease a 1-quart baking dish.
  2. In a large bowl, stir Greek yogurt and softened cream cheese until mostly smooth. Mix in hot sauce, garlic powder and black pepper.
  3. Fold in chicken, half the cheddar, half the mozzarella and half the green onion. Spread in the baking dish and top with remaining cheese.
  4. Bake for 18 to 22 minutes, until bubbling around the edges and hot in the center. Broil for 1 minute if you want a browned top; watch closely.
  5. Rest for 5 minutes, scatter remaining green onion over the top and serve warm with vegetables or crackers.

Slow-cooker option

Stir all ingredients except half the cheese together in a small slow cooker. Heat on low for 1 1/2 to 2 hours, stirring once. Add remaining cheese on top for the last 15 minutes. Keep on warm for serving, but do not leave it out for more than 2 hours.

Adjusting the heat

Start with 1/3 cup hot sauce for a milder dip, then taste before adding more. A splash of lemon juice adds brightness without adding more heat. Use blue cheese crumbles for a classic buffalo flavor or keep it simple with cheddar and mozzarella.

Make-ahead and storage

Assemble the dip up to one day ahead, cover and refrigerate. Bake directly from cold, adding 5 to 10 minutes. Refrigerate leftovers within 2 hours and use within 3 days. Reheat gently in the oven or microwave, stirring once. Avoid repeated reheating.

FAQ

Can I use rotisserie chicken? Yes, remove the skin and shred the meat. Taste before adding salt because prepared chicken may already be seasoned.

What should I serve with it? Celery, carrots, bell pepper strips, cucumber rounds and sturdy crackers all work well.
