Zucchini Noodles with Pesto and Cherry Tomatoes
Ingredients
- 4 large zucchini spiralized into noodles
- 2 cups cherry tomatoes halved
- 1/4 cup pine nuts toasted
For the Pesto:
- 2 cups fresh basil leaves
- 1/4 cup pine nuts
- 3 cloves garlic
- 1/2 cup olive oil
- 1/4 cup Parmesan cheese grated
- Salt and pepper to taste
Instructions
- Make pesto by combining basil, pine nuts, and garlic in a food processor.
- Slowly add olive oil while processing until smooth.
- Stir in Parmesan cheese and season with salt and pepper.
- Heat a large skillet over medium heat.
- Add zucchini noodles and cook for 2-3 minutes until just tender.
- Toss with pesto and cherry tomatoes.
- Top with toasted pine nuts before serving.
