Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients
  

  • 4 large zucchini spiralized into noodles
  • 2 cups cherry tomatoes halved
  • 1/4 cup pine nuts toasted

For the Pesto:

  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts
  • 3 cloves garlic
  • 1/2 cup olive oil
  • 1/4 cup Parmesan cheese grated
  • Salt and pepper to taste

Instructions
 

  • Make pesto by combining basil, pine nuts, and garlic in a food processor.
  • Slowly add olive oil while processing until smooth.
  • Stir in Parmesan cheese and season with salt and pepper.
  • Heat a large skillet over medium heat.
  • Add zucchini noodles and cook for 2-3 minutes until just tender.
  • Toss with pesto and cherry tomatoes.
  • Top with toasted pine nuts before serving.
