Portobello Mushroom Steaks with Vegetables

Ingredients
  

  • 4 large portobello mushroom caps stems removed
  • 2 zucchini sliced lengthwise
  • 1 red onion sliced
  • 2 red bell peppers sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons pine nuts
  • Fresh arugula for serving

Instructions
 

  • Preheat grill or grill pan to medium-high heat.
  • In a large bowl, whisk together balsamic vinegar, olive oil, garlic, herbs, salt, and pepper.
  • Marinate mushrooms and vegetables in mixture for 10 minutes.
  • Grill mushrooms for 5-6 minutes per side until tender.
  • Grill vegetables for 4-5 minutes per side until tender and lightly charred.
  • Arrange mushrooms and vegetables on serving plates.
  • Drizzle with any remaining marinade.
  • Top with pine nuts and serve over arugula.
