Portobello Mushroom Steaks with Vegetables
Ingredients
- 4 large portobello mushroom caps stems removed
- 2 zucchini sliced lengthwise
- 1 red onion sliced
- 2 red bell peppers sliced
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 3 cloves garlic minced
- 2 tablespoons fresh rosemary chopped
- 1 tablespoon fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons pine nuts
- Fresh arugula for serving
Instructions
- Preheat grill or grill pan to medium-high heat.
- In a large bowl, whisk together balsamic vinegar, olive oil, garlic, herbs, salt, and pepper.
- Marinate mushrooms and vegetables in mixture for 10 minutes.
- Grill mushrooms for 5-6 minutes per side until tender.
- Grill vegetables for 4-5 minutes per side until tender and lightly charred.
- Arrange mushrooms and vegetables on serving plates.
- Drizzle with any remaining marinade.
- Top with pine nuts and serve over arugula.
