balsamic vinegar

fresh rosemary
chopped

fresh thyme

Fresh arugula for serving
Instructions
Preheat grill or grill pan to medium-high heat.
In a large bowl, whisk together balsamic vinegar, olive oil, garlic, herbs, salt, and pepper.
Marinate mushrooms and vegetables in mixture for 10 minutes.
Grill mushrooms for 5-6 minutes per side until tender.
Grill vegetables for 4-5 minutes per side until tender and lightly charred.
Arrange mushrooms and vegetables on serving plates.
Drizzle with any remaining marinade.
Top with pine nuts and serve over arugula.
