Moroccan-Spiced Lentil Stew

Ingredients
  

  • 1 1/2 cups red lentils rinsed
  • 3 cups low-sodium vegetable broth
  • 1 can 14.5 oz diced tomatoes
  • 1 onion diced
  • 2 carrots diced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup dried apricots chopped
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons almonds sliced

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and carrots, cook for 5 minutes.
  • Add garlic and all spices, cook for 1 minute.
  • Add lentils, broth, tomatoes, and apricots.
  • Bring to a boil, then reduce heat and simmer for 25 minutes.
  • Garnish with cilantro and almonds before serving.
