Moroccan-Spiced Lentil Stew
Ingredients
- 1 1/2 cups red lentils rinsed
- 3 cups low-sodium vegetable broth
- 1 can 14.5 oz diced tomatoes
- 1 onion diced
- 2 carrots diced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1/2 cup dried apricots chopped
- 2 tablespoons fresh cilantro chopped
- 2 tablespoons almonds sliced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and carrots, cook for 5 minutes.
- Add garlic and all spices, cook for 1 minute.
- Add lentils, broth, tomatoes, and apricots.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Garnish with cilantro and almonds before serving.
