Instructions
Heat olive oil in a large pot over medium heat.
Add onion and carrots, cook for 5 minutes.
Add garlic and all spices, cook for 1 minute.
Add lentils, broth, tomatoes, and apricots.
Bring to a boil, then reduce heat and simmer for 25 minutes.
Garnish with cilantro and almonds before serving.
