Grilled Chicken with Mediterranean Vegetables
Ingredients
- 4 boneless skinless chicken breasts (6 oz each)
- 2 zucchini sliced
- 1 eggplant cubed
- 2 red bell peppers sliced
- 1 red onion sliced
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic minced
- 2 tablespoons fresh oregano
- 1 tablespoon fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup kalamata olives
- 2 tablespoons feta cheese crumbled
Instructions
- Marinate chicken in half the olive oil, lemon juice, garlic, and herbs for 15 minutes.
- Preheat grill to medium-high heat.
- Toss vegetables with remaining oil and seasonings.
- Grill chicken for 6-7 minutes per side until cooked through.
- Grill vegetables for 8-10 minutes until tender.
- Serve chicken with grilled vegetables, topped with olives and feta.
