Grilled Chicken with Mediterranean Vegetables

Ingredients
  

  • 4 boneless skinless chicken breasts (6 oz each)
  • 2 zucchini sliced
  • 1 eggplant cubed
  • 2 red bell peppers sliced
  • 1 red onion sliced
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic minced
  • 2 tablespoons fresh oregano
  • 1 tablespoon fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup kalamata olives
  • 2 tablespoons feta cheese crumbled

Instructions
 

  • Marinate chicken in half the olive oil, lemon juice, garlic, and herbs for 15 minutes.
  • Preheat grill to medium-high heat.
  • Toss vegetables with remaining oil and seasonings.
  • Grill chicken for 6-7 minutes per side until cooked through.
  • Grill vegetables for 8-10 minutes until tender.
  • Serve chicken with grilled vegetables, topped with olives and feta.
