Whole Wheat Pasta with White Bean Sauce
Ingredients
- 12 oz whole wheat pasta
- 2 cans 15 oz each cannellini beans, drained and rinsed
- 4 cloves garlic minced
- 1/4 cup olive oil
- 1/2 cup low-sodium vegetable broth
- 1/4 cup fresh basil chopped
- 2 tablespoons lemon juice
- 1/4 teaspoon red pepper flakes
- 4 cups baby spinach
- 1/4 cup Parmesan cheese grated
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Reserve 1 cup pasta water.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook for 1 minute until fragrant.
- Add beans and broth, mashing half the beans to create a creamy sauce.
- Add cooked pasta, spinach, basil, lemon juice, and red pepper flakes.
- Toss with pasta water as needed to create a creamy consistency.
- Serve topped with Parmesan cheese.
