Whole Wheat Pasta with White Bean Sauce

Ingredients
  

  • 12 oz whole wheat pasta
  • 2 cans 15 oz each cannellini beans, drained and rinsed
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1/2 cup low-sodium vegetable broth
  • 1/4 cup fresh basil chopped
  • 2 tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes
  • 4 cups baby spinach
  • 1/4 cup Parmesan cheese grated
  • Salt and pepper to taste

Instructions
 

  • Cook pasta according to package directions. Reserve 1 cup pasta water.
  • Heat olive oil in a large skillet over medium heat.
  • Add garlic and cook for 1 minute until fragrant.
  • Add beans and broth, mashing half the beans to create a creamy sauce.
  • Add cooked pasta, spinach, basil, lemon juice, and red pepper flakes.
  • Toss with pasta water as needed to create a creamy consistency.
  • Serve topped with Parmesan cheese.
