Ingredients

  • 4 ripe bananas peeled, sliced, and frozen
  • 1/4 cup creamy peanut butter
  • 1/2 tsp vanilla extract
  • A pinch of salt

Optional toppings:

  • chopped nuts, dark chocolate chips, or a drizzle of peanut butter

Instructions

  • Place the frozen banana slices in a food processor or high-powered blender. Blend until they reach a smooth and creamy consistency, scraping down the sides as needed.
  • Add the peanut butter, vanilla extract, and a pinch of salt to the blended bananas. Continue to blend until all the ingredients are well incorporated and the mixture is smooth.
  • For soft-serve consistency, serve the ice cream immediately, garnished with your choice of optional toppings. For a firmer ice cream, transfer the mixture to a freezer-safe container and freeze for at least 2 hours or until it reaches your desired consistency.
  • Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly, making it easier to scoop. Serve with your choice of toppings for added texture and flavor.

Tip:

  • Ensure the bananas are very ripe before freezing them, as this will naturally sweeten the ice cream without the need for added sugars. If you have difficulty blending the bananas, add a tablespoon of almond milk or another plant-based milk to help the blending process without significantly altering the flavor. Experiment with add-ins by blending in cocoa powder for a chocolate version or mixing in cinnamon for added warmth and spice.
