Turkey Meatloaf

Ingredients
  

  • 1 lb ground turkey
  • 1 small green bell pepper finely chopped
  • ½ large onion finely chopped
  • 2 T tomato paste
  • 1 large egg
  • 3 T grated Parmesan cheese
  • 2 garlic cloves minced
  • ½ t dried sage
  • ½ t sea salt
  • ½ t black pepper
  • ½ cup no-sugar-added ketchup
  • Chopped fresh parsley for garnish

Instructions
 

  • In a large bowl, place all the ingredients except the ketchup. Mix the ingredients until well incorporated.
  • Shape meat into a loaf and wrap in foil or place into a loaf pan that fits your slow cooker.
  • Arrange the loaf in a 4- to 6-quart slow cooker. Cover and cook on LOW for 6 hours, or until a meat thermometer inserted in the thickest part of the loaf registers 165°F.
  • Serve topped with ketchup and parsley.
