Sugar-Free Coconut Panna Cotta

- 1 can 13.5 oz full-fat coconut milk
- 1/4 cup granulated sweetener of choice
- 2 tsp. gelatin powder
- 1/2 cup boiling water
- 1 tsp. vanilla extract
- Fresh berries or unsweetened shredded coconut for garnish optional
In a small bowl, sprinkle the gelatin over the boiling water and let it sit for about 5 minutes to soften.
In a saucepan, combine the coconut milk and granulated sweetener. Warm the mixture over medium heat, stirring until the sweetener is completely dissolved. Do not allow the mixture to boil.
Add the softened gelatin to the coconut milk mixture and stir until the gelatin is fully dissolved. Remove from heat and stir in the vanilla extract.
Divide the mixture evenly among 4 serving glasses or ramekins. Allow to cool to room temperature, then cover and refrigerate for at least 4 hours, or until set. Garnish with fresh berries or a sprinkle of unsweetened shredded coconut before serving, if desired.
Tip:
For a smoother panna cotta, you can blend the coconut milk mixture for a few seconds before adding the gelatin. If you prefer a layered dessert, let the first layer set partially in the refrigerator before adding a second layer of flavored panna cotta or fruit puree. To easily unmold the panna cotta, dip the bottom of each ramekin in hot water for a few seconds before inverting onto a serving plate.
